Flat mushrooms are fully mature white mushrooms. They have wide open caps and dark brown gills. They have a bold, rich flavour and are wonderful stir-fried, stuffed and barbecued. Choose firm white mushrooms that have a dry surface and white to cream colour. Store mushrooms in a brown paper bag on the lowest shelf in the fridge. Do not wash mushrooms before storing, instead, wipe with a damp cloth or paper towel to remove loose dirt before preparing.
