Button mushrooms are the youngest stage of white mushroom. They have a firm, thick stalk and a cap that is tightly closed around the stem. They have a light, fresh, subtle flavour that is lovely in salads, stir-fries, and stews. Store mushrooms in a brown paper bag on the lowest shelf in the fridge. Do not wash mushrooms before storing, instead, wipe with a damp cloth or paper towel to remove loose dirt before preparing.
